Lasagna made with meatballs, fresh mozzarella cheese and grilled vegetables.
I made this a while ago and forgot to add it here. I know bad blogger! There are quite a few steps with this recipe but when it is finished you won’t regret it. You could save a few steps by using your favorite jarred spaghetti sauce. I had made the meatballs a few weeks before when I made spaghetti and froze them so all I had to do was thaw them out which again saved some time. You could also make this recipe without the meatballs for a vegetarian dish and save quite a bit of time.
Layer your pasta, sauce, meatballs and then half of a mozzarella ball on each meatball.
Add another layer of grilled vegetables and a little more sauce.
Top with mozzarella cheese and repeat another layer. Then add a layer of noodles, sauce and cheese.
- Meatballs
- 1 1/2 lbs. ground beef
- 2 eggs
- 1 medium onion - chopped finely
- 2 cups crushed cracker crumbs
- 1/2 cup ketchup
- 1/4 cup milk -more if it seems to dry
- salt and pepper
- 1 teaspoon basil
- Sauce
- 1/4 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 (32-ounce) cans crushed tomatoes
- 2 cups water
- salt and pepper
- 2 dried bay leaves
- 1 tablespoon basil
- 1 teaspoon oregano
- 1 - 2 tablespoons sugar - depending on the tomatoes
- Vegetables
- 1 eggplant sliced
- 2 - 3 zucchinis
- olive oil
- salt and pepper
- To assemble
- 1 package Lasagna noodles - cooked
- mozzarella balls
- 3 cups mozzarella cheese
- Meatballs
- Mix all the ingredients together in a mixing bowl.
- Preheat oven to 350 degrees. Spray a baking sheet with oil.
- Make the meatballs using about 1/3 cup of the meat mixture. Bake for 20 - 25 minutes or until cooked thoroughly. Cool. Slice into rounds.
- Sauce
- Saute the onions in the olive oil, add garlic. Add remaining ingredients except sugar. Cook over medium heat for 30 minutes. Taste and adjust seasoning and add sugar a little at a time to balance the flavor. Cook another 30 minutes. Cool.
- Vegetables
- Slice all the vegetables, eggplant into rounds and the zucchini lengthwise. Brush lightly with olive oil, salt and pepper to taste.
- To assemble:
- Grease a 9 x 13 inch deep dish baking pan. Layer your pasta, sauce, meatballs and then half of a mozzarella ball on each meatball. Add another layer of grilled vegetables and a little more sauce. Top with mozzarella cheese and repeat again from the beginning with another layer. Then add another layer of noodles a little more sauce and mozzarella cheese. Then add a layer of noodles, sauce and cheese.
- Preheat oven to 350 degrees. Cover and bake for an hour. Remove cover and cook another 30 minutes or until really hot and bubbly. Let set 10 minutes before cutting.
