Meatball and Grilled Vegetable Lasagna

Lasagna made with meatballs, fresh mozzarella cheese and grilled vegetables
Ingredients
  • Meatballs
  • 1 1/2 lbs. ground beef
  • 2 eggs
  • 1 medium onion - chopped finely
  • 2 cups crushed cracker crumbs
  • 1/2 cup ketchup
  • 1/4 cup milk -more if it seems to dry
  • salt and pepper
  • 1 teaspoon basil
  • Sauce
  • 1/4 cup extra-virgin olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 2 (32-ounce) cans crushed tomatoes
  • 2 cups water
  • salt and pepper
  • 2 dried bay leaves
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • 1 - 2 tablespoons sugar - depending on the tomatoes
  • Vegetables
  • 1 eggplant sliced
  • 2 - 3 zucchinis
  • olive oil
  • salt and pepper
  • To assemble
  • 1 package Lasagna noodles - cooked
  • mozzarella balls
  • 3 cups mozzarella cheese
Instructions
  1. Meatballs
  2. Mix all the ingredients together in a mixing bowl.
  3. Preheat oven to 350 degrees. Spray a baking sheet with oil.
  4. Make the meatballs using about 1/3 cup of the meat mixture. Bake for 20 - 25 minutes or until cooked thoroughly. Cool. Slice into rounds.
  5. Sauce
  6. Saute the onions in the olive oil, add garlic. Add remaining ingredients except sugar. Cook over medium heat for 30 minutes. Taste and adjust seasoning and add sugar a little at a time to balance the flavor. Cook another 30 minutes. Cool.
  7. Vegetables
  8. Slice all the vegetables, eggplant into rounds and the zucchini lengthwise. Brush lightly with olive oil, salt and pepper to taste.
  9. To assemble:
  10. Grease a 9 x 13 inch deep dish baking pan. Layer your pasta, sauce, meatballs and then half of a mozzarella ball on each meatball. Add another layer of grilled vegetables and a little more sauce. Top with mozzarella cheese and repeat again from the beginning with another layer. Then add another layer of noodles a little more sauce and mozzarella cheese. Then add a layer of noodles, sauce and cheese.
  11. Preheat oven to 350 degrees. Cover and bake for an hour. Remove cover and cook another 30 minutes or until really hot and bubbly. Let set 10 minutes before cutting.
