Butter Riches are a buttery, light cookie with a brown sugar frosting. One of my favorites for a cookie exchange or on a cookie tray.

Serves: 30 cookies
 
Buttery, light cookies with a browned butter frosting.
Ingredients
  • 3/4 Cups Butter
  • 1/2 Cups Brown Sugar
  • 1 tablespoon Sugar
  • I Egg Yolk
  • 1 teaspoon Vanilla
  • 1 3/4 - 2 Cups Flour
Frosting
  • 1/4 Cup Butter
  • 2 1/2 Cups Powdered Sugar
  • 1 teaspoon Vanilla
  • 3 – 4 tablespoons Milk
Instructions
  1. Cream together butter, brown sugar and sugar.
  2. Add an egg yolk and vanilla. Mix in thoroughly.
  3. Add enough flour to make a stiff dough.
  4. Shape into balls about the size of a walnut. Place on a greased cookie sheet. Flatten with a glass that has been dipped in sugar, to the size of a half dollar.
  5. Bake cookies at 350°F. for 7 – 9 minutes. Cool on a wire rack.
Frosting
  1. Brown butter in a pan over medium heat.
  2. Stir in Powdered Sugar and Vanilla.
  3. Gradually stir in Milk until it reaches a spreading consistency.
  4. Frost cookies and add sprinkles if desired.

    My sister makes me a batch of her delicious homemade oatmeal cookies for Christmas every year. It takes all I can do to wait to get them on Christmas Day because they are by absolute fave!

    I don’t know if it’s considered a holiday cookie or not, but everyone says my peanut butter cookies are the BEST they have ever tasted…and I hate to brag, but I have to agree! I have pretty made them my signature cookie, and I really don’t even make any other cookie BUT those! Why mess with a good thing,right?!
