Mini muffins full of the flavors of gingerbread. Quick and easy to make.

Gingerbread Muffins

I found this recipe the other day and it is supposed to be a clone of the muffins you get for free at Jason’s Deli. I could go to Jason’s for the muffins alone, but alas these are not it. They are delicious however as a gingerbread muffin. I have some ideas of how to adjust this to get it more like Jason’s and when I do I will share it.

Mini muffins full of the flavors of gingerbread. Quick and easy to make.
Ingredients
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 1/2 cup buttermilk
  • 2 tablespoons oil
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 1/3 cups flour
  • 3/4 teaspoon baking soda
Instructions
  1. Preheat oven to 375 degrees. Spray a mini muffin pan with cooking spray.
  2. Mix together the brown sugar, oil, buttermilk, egg, molasses and spices. Whisk the ingredients together until well mixed.
  3. Add the flour and baking soda. Mix just until all is combined. Scoop the batter into prepared pan.
  4. Bake for 8 - 10 minutes. Remove from pan.

    I assume the oil goes in with the wet ingredients?
