Blueberry Crumble

So you are going to see I have a trend going on here. The blueberries are in and Aldi’s has them at a great price. Tonight blueberry crumble was on the menu. Do you ever get confused by blueberry crumble, buckles, crisps, grunts, cobblers, betty’s and slumps? I got confused when I started to think about it. All of these desserts have the same ingredients, fruit, sugar, flour and some kind of topping.

So what’s a crumble? It’s like the recipe below where the fruit gets topped with a oat based streusel. Leave out the oats and you will have a crisp. Cobblers? Biscuits dropped on top of heavenly summer fruits. Buckles are like my peach cobbler recipe on this site that has batter on the bottom and the fruit goes on top so that the batter raises around the fruit as it cooks. Slumps and grunts? They are the same thing as a cobbler but cooked on the stove or over a campfire. With a lid on the pot the biscuits steam cook from the fruit. That leaves us with brown betty’s, which have a streusel top and bottom with no oats, Yum!

Before I could get the pictures of the blueberry crumbles I had made I opened a cupboard to get my salt container down and the lid flipped off and hit the dishes, breaking both of them. I couldn’t do that again if I tried. I should of taken the pictures last night and you could of seen how good these really did look.

The topping on this recipe is so good, I can see using it again on muffins, ice cream for some crunch or even as a topping on a vegetable dish like squash or sweet potatoes. So here was what left after I cleaned up the damage. I am just having one of those days I guess.

Juicy blueberries with an oatmeal, almonds and raw sugar topping. Great served with ice cream while still warm from the oven.
Ingredients
  • 1 pint blueberries
  • 2 tablespoons Stevia or 3 tablespoons sugar
  • 2 teaspoons flour
  • lemon zest
  • Topping
  • 1/2 cup oatmeal
  • 2 tablespoons raw sugar
  • 1/4 cup sliced almonds
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter
Instructions
  1. Put blueberries in the dishes you are going to bake them in. I used small round bakers that have been sprayed with cooking spray. Sprinkle with flour and sugar.
  2. Put all of the topping ingredients in a small bowl. Mix it up so that the mixture is in crumbles. Sprinkle the mixture over the blueberries.
  3. Bake in a 400 degree oven for 20 - 30 minutes. Crumble will be browned and blueberries bubbly around the edges.
