Peanut Butter Brownie Cups

These little desserts are best the day they are made. In fact, I would say about 2 hours after they come out of the oven would be perfect. They still have a ooey gooey factor going on at that point. I would also assemble them right before serving if not serving right away. I served them about 6 hours after I made them and because I added the peanut butter filling right away it I refrigerated them. I would not refrigerate these when I make them again.
It only takes a few minutes to add the filling and top with the whipped cream. I used whipped cream out of the canister that you can buy just for convenience. The brownie is so good, dense and fudgy and really rich! The peanut butter cup will fall to the bottom while it bakes and it creates a cavity for the peanut butter filling.
- 4 oz. semi-sweet chocolate
- 1/2 cup butter
- 2 eggs
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 1/2 cup flour
- 1/4 teaspoon salt
- 8 mini peanut butter cups
- Peanut Butter Filling
- 1 cup heavy cream
- 3 tablespoons peanut butter
- 1/2 cup powdered sugar
- Topping
- 8 mini peanut butter cups
- whipped cream
- Melt butter and semi-sweet chocolate together in the microwave. Cool slightly.
- Add chocolate mixture to a mixer bowl. Add eggs and blend in. Add sugar, vanilla and beat for 2 minutes.
- Add the flour and salt and beat until flour is incorporated.
- Spray 8 dishes (I used small canning jars) with cooking spray. Divide the brownie mixture up between the 8 containers, filling no more than 3/4 full. Add a peanut butter cup.
- Bake in a 350 degree oven for 20 - 25 minutes. Brownies will rise above the canning jars.
- Let cool before adding peanut butter filling.
- Whip the heavy cream, confectioner's sugar and peanut butter together. It will not get stiff and will set up in the refrigerator. Do this while the brownies are baking. Refrigerate until ready to use. There will be a slight depression in the brownies, add the peanut butter filling into the cavity after the brownies are cooled. Top with whipped cream and another peanut butter cup.
