Peanut Butter Brownie Cups

Deep dark chocolate brownie with a peanut butter cup surprise, a peanut butter filling and whipped cream!
Ingredients
  • 4 oz. semi-sweet chocolate
  • 1/2 cup butter
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 8 mini peanut butter cups
  • Peanut Butter Filling
  • 1 cup heavy cream
  • 3 tablespoons peanut butter
  • 1/2 cup powdered sugar
  • Topping
  • 8 mini peanut butter cups
  • whipped cream
Instructions
  1. Melt butter and semi-sweet chocolate together in the microwave. Cool slightly.
  2. Add chocolate mixture to a mixer bowl. Add eggs and blend in. Add sugar, vanilla and beat for 2 minutes.
  3. Add the flour and salt and beat until flour is incorporated.
  4. Spray 8 dishes (I used small canning jars) with cooking spray. Divide the brownie mixture up between the 8 containers, filling no more than 3/4 full. Add a peanut butter cup.
  5. Bake in a 350 degree oven for 20 - 25 minutes. Brownies will rise above the canning jars.
  6. Let cool before adding peanut butter filling.
  7. Whip the heavy cream, confectioner's sugar and peanut butter together. It will not get stiff and will set up in the refrigerator. Do this while the brownies are baking. Refrigerate until ready to use. There will be a slight depression in the brownies, add the peanut butter filling into the cavity after the brownies are cooled. Top with whipped cream and another peanut butter cup.
