Salt and Pepper Chicken Wings with Dill Pickle Dip
I’m all about salt and pepper anything. It is one of my favorite things to order when we go out for Chinese food. I decided to try the flavor combination on the chicken wings because I wanted to dip the wings into this Dill Pickle Dip.
Making the wings is simple. You want a lot of cracked black pepper on them, not the kind we use everyday out of the can. It won’t be the same. If you have a pepper grinder that does a coarse grind that will work and so will peppercorns crushed with the bottom of a flat pan. We are looking for a bite of pepper here. Sea salt or coarse ground salt is what you need for the salt part of this. Again salt from the table shaker is not what we want. You want to liberally put the salt and pepper on the wings as some of it will come off in the grilling process.
Normally when you do Chinese style Salt and Pepper Chicken it would be finished with a sauce with lots of pepper in it. We’re skipping that part with these wings because it just won’t go with this delicious pickle dip. If you’re a pickle lover be prepared to think this might just be the best mouthful of food you’ve had in a while.
