Fudgey Coca Cola Cake
Yeah, it’s Sunday Supper time! I love when I get together with my friends and share a meal. April 22nd is Earth Day and April 23rd is National Picnic Day so we’re sharing recipes to enjoy while picnicking in the great outdoors. I love preparing picnics and loading up the picnic basket with all kinds of goodies to make the meal special.
Here are some of my tips to help make this picnic special.
1. Choose foods that travel well. There is no point to decorate cupcakes if they end up smeared all over the container you are taking them in. Choose brownies or a cake like the one I’m sharing or even some jumbo delicious cookies.
2. Hand held foods work best. A cheese and cracker try works well also. Choose cheeses that improve as they set out like brie, goat cheeses or marinated mozzarella or feta. Hard cheeses like cheddar will get sweaty if they set out so you want to avoid them.
3. Minimize the cooking, buying roasting chicken or instead of sliced tomatoes use grape or cherry tomatoes that are marinated. Wait to dress salads until right before serving.
This cake will travel well and you’re going to love how moist and fudgey the frosting is. It takes less than an hour from start to finish to make it. The batter also makes great cupcakes, so if you wanted to just put the fudgey frosting on cupcakes this will travel well.
- 1 cup coca cola
- 1/2 cup vegetable oil
- 1/2 cup butter
- 1 teaspoon vanilla
- 3 tablespoons cocoa
- 2 cups granulated sugar
- 2 cups flour
- 1 teaspoon baking soda
- 2 large eggs
- 1/2 cup buttermilk
- *1Frosting*:
- 1/2 cup butter
- 3 tablespoons cocoa
- 6 tablespoons milk
- 1 teaspoon vanilla
- 4 cups confectioner's sugar
- 1 cup walnuts - optional
- Preheat oven to 350 degrees. Grease a 9 x 13 pan.
- Put a cup of coca cola, butter, vegetable oil, and cocoa in a saucepan. Bring to a boil, Set aside for a few minutes.
- Combine the flour, sugar and baking soda in a mixer bowl. Whisk to combine. Add the buttermilk and the cocoa mixture to the flour and beat until thoroughly combined. Add the eggs and mix well.
- Pour into the prepared pan. Spread out to the edges. Place pan in center of oven. Bake for 25 - 30 minutes.
- When the cake comes out of the oven, make the frosting.
- Put the butter, cocoa, and milk in a saucepan. bring to a boil and boil for one minute. Remove from heat and add confectioner's sugar. Spread on top of cake. Add walnuts if using.
