Banana Walnut Cookies are soft, cakey cookies full of walnuts.
Banana Walnut Cookies
I had about 6 bananas past the eating stage for me and just didn’t want banana bread again. Instead I made these delicious Banana Walnut Cookies I found in my recipe file on an old newspaper clipping. I love soft, cakey type cookies and these did not disappoint. I added my moms browned butter frosting and they were so delicious. These would be perfect for back to school lunches.
Making browned butter frosting is so easy. You do have to watch the butter carefully once it starts to brown. The butter will foam up and at that point I take it off of the heat and stir it. Sometimes at this point the butter is browned enough, but if not put it back on the heat for a few more seconds. The butter can continue to brown even when off of the heat.
- 1 cup sugar
- 1/2 cup butter
- 1/2 cup shortening
- 1 teaspoon vanilla
- 2 eggs
- 1 cup ripe bananas - I used 3
- 1/2 cup buttermilk
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon. salt
- 3 1/4 cups flour
- 3/4 cup chopped walnuts
- Frosting
- 1/2 cup butter
- 3 cups confectioners sugar
- 1 teaspoon vanilla
- 4 tablespoons milk
- Preheat oven to 350 degrees.
- Cream together the butter, shortening and sugar until light and fluffy. Add the eggs one at a time. Beat until thoroughly incorporated.
- Smash the bananas in a small bowl. Add to the sugar - butter mixture with the vanilla. Add the buttermilk.
- Combine the baking soda, salt and flour. Add to the sugar mixture and mix until thoroughly incorporated. Stir in walnuts
- Using a medium scoop drop cookie batter onto a greased baking sheet. Bake for about 10 minutes until cookie springs back in the center. Remove to a wire rack to cool.
- For frosting, brown butter in a saucepan. It will burn if you don't watch it closely. Remove it from the heat before you think it is brown enough as it will continue to brown off of the heat. Let cool slightly. Add the confectioners sugar, vanilla and milk. Stir until smooth and creamy. It might be necessary to add a little more milk.
