Banana Walnut Cookies with Browned Butter Frosting

Soft, cakey banana cookies with browned butter frosting.
Ingredients
  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup ripe bananas - I used 3
  • 1/2 cup buttermilk
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon. salt
  • 3 1/4 cups flour
  • 3/4 cup chopped walnuts
  • Frosting
  • 1/2 cup butter
  • 3 cups confectioners sugar
  • 1 teaspoon vanilla
  • 4 tablespoons milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Cream together the butter, shortening and sugar until light and fluffy. Add the eggs one at a time. Beat until thoroughly incorporated.
  3. Smash the bananas in a small bowl. Add to the sugar - butter mixture with the vanilla. Add the buttermilk.
  4. Combine the baking soda, salt and flour. Add to the sugar mixture and mix until thoroughly incorporated. Stir in walnuts
  5. Using a medium scoop drop cookie batter onto a greased baking sheet. Bake for about 10 minutes until cookie springs back in the center. Remove to a wire rack to cool.
  6. For frosting, brown butter in a saucepan. It will burn if you don't watch it closely. Remove it from the heat before you think it is brown enough as it will continue to brown off of the heat. Let cool slightly. Add the confectioners sugar, vanilla and milk. Stir until smooth and creamy. It might be necessary to add a little more milk.
