New York Strip Roast with Gremolata Butter

The Certifed Angus Beef New York Strip Roast I cooked was a 3.5 lb. roast that the butcher cut for me. I want to tell you this roast just melts in your mouth. It was amazing. I went to Shaner’s Land and Sea Market at St. Petersburg Beach in Pass-A-Grille to get my roast where the butcher cut my roast to my specifications. You can use the store locator to find Certified Angus Beef in stores and restaurants where you live.

I was cooking for 4 so I used the Roast Perfect App to see how big of a roast I would need.
The Roast Perfect App will then tell you how the best way to cook your beef roast.
To prepare it for cooking all I did was add salt and pepper. Beef this perfect sure doesn’t need anything else, even though I decided to dress it up with a little gremolata butter.
Look at this beautiful marbling this roast has! The marbling is what you’re looking for no matter what cut you buy. Those little flecks of marbling will melt into the beef as it cooks making the roast tender and juicy. Be sure to let it rest at least 10 minutes before carving.
This was so good! I owe it all to the Perfect Roast App. It is so easy to use.
- 1 New York Strip Roast - mine was 3.5 lbs.
- 1 tablespoon salt
- 2 teaspoons freshly ground pepper
- 1 tablespoon oil
- Gremolata Butter
- 1/4 cup flat parsley
- 3 garlic cloves
- 1/2 cup butter
- 2 tablespoons lemon juice
- rind from 1 lemon
- Rub the oil over the roast. Salt and pepper the roast. Rub it into the roast so that it sticks to the meat.
- Preheat the oven to 450 degrees. Place the meat, fat side up in a roasting pan fitted with a rack. Bake for 15 minutes.
- Turn down heat to 325 degrees. Roast for about 1.25 hours or until roast reaches 135 - 140 degrees for medium doneness.
- Remove roast from oven. Tent loosely with foil and let set for 10 minutes before carving.
- To make the gremolata butter, add the parsley leaves and garlic to a food processor. Process until finely chopped. Add butter. Roll into a cylinder on waxed paper. Refrigerate until ready to use.

Yes, that simple touch of gremolata butter is all that’s needed for an incredibly and perfectly cooked roast.
Oooh, I love the idea of adding a gremolata to a beef roast! In fact, I’d love this on our next grilled strip steaks :)
I have never had a strip roast, but strip steak is one of my favorite cuts of steak, so I know I’d love this. It looks scrumptious!
Where I bought it they cut it to order. So once I saw how big it had to be using the Roast Perfect app, he cut it to size! This was as good as any prime rib and it had always been my favorite roast.

what do you do with the grematola butter? The instructions do not indicate.
it is just a topping for the roast. Adds lots of flavor as it melts on the roast.
Do you melt the butter, do you mix it all and refrigerate? do you add the lemon juice and rind-not in the instructions
