To remove the tomato peel for canning or sauces, make an X on the bottom of each tomato. Bring a large pan of water to boil. Place 3 to 4 tomatoes in pan for about 10 seconds.
Use a slotted spoon and remove tomato from water and place in a bowl of ice water.
When cool enough to handle, remove from water and peel off skins with your fingers or a paring knife.
