When shopping for lemons choose smooth-skinned lemons that are heavy for their size.
To get the moist juice from your lemons, roll the lemon on a cutting board firmly with the palm of your hand. It is best at room temperature. The pressure crushes the lemons membranes helping to extract more juice.
Microwaving the lemon for a few seconds before squeezing will help extract more juice. Don’t overdo it. You don’t want to boil the lemon juice.
Lemon juice will help with the discoloration of other fruits when squeezed over it.
1 medium lemon equals approximately 1 tablespoon of lemon zest and 2 tablespoons of lemon juice.
