Tomato and Garlic Pasta

Fresh pasta with tomatoes, garlic, basil and parmesan cheese.
  • 1 9 oz. package fresh pasta
  • 1 teaspoon salt
  • 4 - 5 Fresh From Florida tomatoes
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • fresh basil
  • 1/2 cup Parmesan cheese
  • salt and pepper to taste
  1. Bring a large pan of water to a boil. Cut a X in the bottom of the tomatoes. Add to the boiling water. Cook for 2 minutes. Remove from pan and run cold water over the tomatoes. Remove the skins from the tomatoes.
  2. Cut the tomatoes in half. Gently squeeze the tomatoes to remove the seeds. Chop the tomatoes into bite size pieces.
  3. Bring a pan of water to a boil. Add the pasta and cook according to package directions. Drain reserving 1/2 cup of liquid.
  4. Add the oil to a large saute pan. Add the garlic. Cook for 2 - 3 minutes, do not let it brown.
  5. Add the tomatoes to the pan. Cook for 5 - 7 minutes. Add a half cup of the water from the pasta pan.
  6. Add the pasta, basil, salt and pepper. Stir in the parmesan cheese.
