Banana Cake with Caramel Frosting

Ingredients
  • 1 1?2cups bananas, mashed, ripe
  • 2teaspoons lemon juice
  • 3 cups flour
  • 1 1?2 teaspoons baking soda
  • 1?4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup vegetable oil
  • 2 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 1?2 cups buttermilk
Instructions
  1. Preheat oven to 275 degrees. Grease and flour 2 8 inch cake pans or a 9 x 13 pan.
  2. Mix together the flour, baking soda and salt. Set aside.
  3. Mash the bananas in a small bowl. Set aside.
  4. Cream together the butter and sugar on medium speed with a mixer. When light and fluffy add the oil.
  5. Add the eggs one at a time. Mix well after each egg. Add the vanilla.
  6. Add half of the flour mixture and half of the buttermilk. Mix well. Repeat with the remaining flour mixture and buttermilk. Mix well.
  7. Pour batter into prepared pans.
  8. Bake for 1 hour and 10 minutes or until a tester comes out clean when inserted in the center of the cake. Remove cakes from pan and let cool on a wire rack if doing the layer cake.
