Pumpkin Pecan Cobbler

Ingredients
  • Cake
  • 1 cup + 3 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • Topping
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pecans
  • 1 1/2 cups very hot water
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix together the flour, baking powder, salt, sugar, cinnamon and nutmeg.
  3. Mix together in a mixing bowl the pumpkin, milk, oil, egg and vanilla. Beat together until well mixed. Add the dry ingredients. Mix well.
  4. Pour batter into an 8 x 8 baking dish that has been sprayed well with cooking spray.
  5. In a small bowl combine the topping ingredients, sugar and pecans. Sprinkle over the cake.
  6. Add the water carefully on top. Do NOT stir!
  7. Bake for 40 minutes.
