Apple Cider Brined Pork Chops

Get your grill out and try these savory apple cider brined pork chops. Served with thanks and cranberry sauce, they are the perfect taste of fall.
Ingredients
  • 4 New York Pork Chops (center cut)
  • Brine
  • 1/4 cup honey
  • 1/4 cup kosher salt
  • 1 - 2 bay leaves
  • 2 sprigs fresh thyme
  • 1 teaspoon freshly ground pepper
  • 2 cups apple cider
Instructions
  1. Mix all of the brine ingredients together. Stir until it is all combined. Put half of the brine in a pan to marinate the pork chops. Add pork chops and pour remaining brine over them. Marinate for 30 minutes to 1 hour.
  2. Heat grill to medium heat.
  3. Remove pork chops from the brine. Pat the pork chops dry with a paper towel. I like to add a little more freshly ground pepper at this time.
  4. Cook over medium heat for 5 minutes. Turn pork chops over and cook until done, about 3 - 5 minutes depending on the thickness of your pork chops. (pork chops should have an internal temperature between 145°F (medium rare) and 160°F (medium).) Let rest for 3 minutes before serving.
