Pumpkin Waffles

Pumpkin Waffles are full of pumpkin flavor with cinnamon, nutmeg and allspice.
  • 1 1/4 cups flour
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 3/4 cup pumpkin
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons vegetable oil
  1. Mix together the flour, brown sugar, cinnamon, ginger, allspice and salt.
  2. Separate the eggs, putting the whites in a mixing bowl. Whip the egg whites until stiff.
  3. In another bowl combine the egg yolks, milk, oil and pumpkin. Mix until incorporated.
  4. Add the flour to the wet ingredients. Mix well.
  5. Fold in half of the egg whites with a spatula.
  6. Pour the batter into a hot greased waffle iron. Cook until the waffle maker beebs or when you pull up the top it easily pulls. If it doesn't cook it a little longer.
