Sunday Dinner Pork Loin Roast

Tender loin of pork with mashed potatoes, gravy and baby carrots.
  • 3 - 3 1/2 lbs. pork loin
  • 4 garlic cloves - minced
  • 1 teaspoon rosemary
  • salt and pepper
  • 1 medium onion
  • 1 cup chicken stock
  • oil
  • 1 lb. baby carrots
  1. Preheat oven to 350 degrees.
  2. Mix garlic, rosemary, salt and pepper together. Rub mixture over roast.
  3. Heat a small amount of oil in a dutch oven. Add roast to pan and brown well on all sides. Add onion and cook until it begins to soften and gets a little brown. Add chicken stock. Cover.
  4. Bake for about 2 hours or until roast reaches 145 degrees. Halfway thru the cooking time add the carrots.
  5. Let roast rest 10 minutes before slicing.
  6. Make gravy using 3-4 tablespoons flour mixed with water. Bring the pan juices to a boil. Stir in the flour mixture. Taste for seasonings add salt and pepper as necessary.
