One Pot Burrito Bowl

A delicious one pot burrito bowl that won't heat up your kitchen on these hot summer days.
Ingredients
  • 1 tablespoon oil
  • 1/2 cup red bell pepper
  • 1 cup diced sweet onion
  • 1 pound ground turkey breast
  • 1 cup chunky salsa
  • 1 15 oz. can black beans, rinsed and drained
  • 1 14.5 oz. can diced tomatoes
  • 1 4 oz. can diced green chilies
  • 1 package taco seasoning
  • 1/2 teaspoon chili powder
  • 2 cups chicken broth
  • salt and pepper to taste
  • 1 cup jasmine rice (or any long grain rice)
  • flour tortillas
  • Optional toppings:
  • shredded cheddar cheese
  • sour cream
  • cilantro
  • green onions
  • tomatoes
  • avocado
Instructions
  1. In a large pan heat the oil over medium heat. Add the onions and red peppers.
  2. Add in ground turkey and cook until browned.
  3. Stir in salsa, black beans, tomatoes, green chilies, rice, taco seasoning and chili
  4. powder.
  5. Pour in chicken broth and then bring to a light boil. Cover the pan and reduce heat to low. Cook for an additional 15-20 minutes, or until the rice is all the way cooked.
  6. When rice is done, S&P to taste. Top with your favorite toppings. We like to
  7. serve over lettuce in a salad bowl and eat with tortilla chips
