Chickens and Blueberry French Toast

French toast covered with Blueberry Maple Syrup
Ingredients
  • Blueberry French Toast
  • 3 eggs
  • 1/2 cup milk
  • 4 pieces 1 inch thick Italian Bread
  • Oil
  • Butter
  • Blueberry Sauce
  • 1 pint blueberries
  • Water to cover
  • 1 tablespoon sugar
  • 1 tablespoon butter
  • Maple syrup
Instructions
  1. To make the sauce add the blueberries to a small sauce pan. Add water to cover. Add the sugar and butter. Cook over high heat to reduce the water. When it has reduced add maple syrup, about ½ cup. Cook until it reaches a syrup consistency. (Mine took about 10 minutes)
  2. Beat eggs with milk in a pie pan. Add bread and allow it to soak up the egg mixture. Heat a sauté pan and add equal amounts of oil and butter. Cook French toast until it is browned on both sides.
