Apple Streusel Pecan Bread

Serves: 1 loaf
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup buttermilk
- 2 teaspoons baking powder
- 2 eggs
- 1 1/2 teaspoon vanilla
- 2 cups flour
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 cups apple - shredded, peeled
- 1/2 cup chopped pecans
- 1/4 cup brown sugar
- 3 tablespoons flour
- 1/4 teaspoon cinnamon
- 2 tablespoons butter
- 1/4 cup pecans - chopped
- Preheat oven to 350 degrees. Spray a bread pan with cooking spray.
- Mix together topping ingredients in a small bowl and set aside.
- Cream together the butter and sugars in a mixing bowl.
- Add the eggs and vanilla and mix until incorporated.
- Add the buttermilk and mix well.
- Add the flour, cinnamon, baking powder and salt. Mix together.
- Add apples and pecans. Mix until just incorporated.
- Bake for about 60 minutes or until a tester comes out clean.
