Apple Streusel Pecan Bread

Delicious loaf of Apple Streusel Pecan Bread with shredded apples, cinnamon and pecans.
Ingredients
Batter
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 cup buttermilk
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 1/2 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 cups apple - shredded, peeled
  • 1/2 cup chopped pecans
Streusel Topping
  • 1/4 cup brown sugar
  • 3 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter
  • 1/4 cup pecans - chopped
Instructions
  1. Preheat oven to 350 degrees. Spray a bread pan with cooking spray.
  2. Mix together topping ingredients in a small bowl and set aside.
  3. Cream together the butter and sugars in a mixing bowl.
  4. Add the eggs and vanilla and mix until incorporated.
  5. Add the buttermilk and mix well.
  6. Add the flour, cinnamon, baking powder and salt. Mix together.
  7. Add apples and pecans. Mix until just incorporated.
  8. Bake for about 60 minutes or until a tester comes out clean.
