Blueberry Cake Bars

Blueberry Cake Bars are a buttery blueberry treat with a crumble topping.
Ingredients
  • 6 tablespoons butter melted, and 1/2 cup (1 stick), room temperature
  • 1 3/4 cups flour
  • 1/2 cup packed light-brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup confectioners' sugar
  • 1/2 teaspoon vanilla
  • 2 large eggs
  • 1 1/2 cups blueberries
Instructions
  1. Mix together the melted butter, 1 cup flour and brown sugar. Put bowl in refrigerator.
  2. Preheat oven to 350 degrees. Cut a piece of parchment paper for a 8 x 8 pan and let the excess paper hang over the sides. Spray with cooking spray.
  3. In mixer bowl add the butter and confectionary sugar. Mix together until light and fluffy.
  4. Add the eggs one a time. Mix until incorporated.
  5. Add the flour, salt and baking powder. Mix until incorporated. Spread mixture out in prepared pan. Sprinkle the blueberries over the top. Press lightly down. Fluff up the crumble mixture with a fork. Sprinkle lightly over the top.
  6. Bake for 40 to 45 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 squares.
