Roasted Garlic Pork Tenderloin

Ingredients
  • 1 2 lb. pork tenderloin
  • 10 - 12 baby potatoes coated with 1 teaspoon olive oil and salt
Marinade
  • 3 - 4 cloves garlic
  • 2 tablespoons brown sugar
  • juice of 1/2 lemon
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 1 teaspoon greek seasoning
  • 1/2 teaspoon pepper
Instructions
  1. Remove silver skin from pork tenderloin. With a fork poke holes all over pork tenderloin.
  2. Mix together marinade ingredients in a plastic bag. Add pork tenderloin. Marinade for at least 20 minutes or up to 4 hours.
  3. Preheat oven to 450 degrees. Spray a pan with cooking spray. Place tenderloin in pan. Place in hot oven for 10 minutes.
  4. Add potatoes to pan and sprinkle with a little additional salt.
  5. Continue to bake until potatoes are browned, about 20 minutes.
  6. Remove from oven and let sit 5 minutes before slicing pork.
