Roasted Garlic Pork Tenderloin

- 1 2 lb. pork tenderloin
- 10 - 12 baby potatoes coated with 1 teaspoon olive oil and salt
- 3 - 4 cloves garlic
- 2 tablespoons brown sugar
- juice of 1/2 lemon
- 1/2 cup soy sauce
- 1/4 cup olive oil
- 1 teaspoon greek seasoning
- 1/2 teaspoon pepper
- Remove silver skin from pork tenderloin. With a fork poke holes all over pork tenderloin.
- Mix together marinade ingredients in a plastic bag. Add pork tenderloin. Marinade for at least 20 minutes or up to 4 hours.
- Preheat oven to 450 degrees. Spray a pan with cooking spray. Place tenderloin in pan. Place in hot oven for 10 minutes.
- Add potatoes to pan and sprinkle with a little additional salt.
- Continue to bake until potatoes are browned, about 20 minutes.
- Remove from oven and let sit 5 minutes before slicing pork.
