Apple Cider Donuts

Serves: 1 dozen large donuts or 2 dozen minis
 
Baked apple cider donuts with a hint of cinnamon and nutmeg. All the taste of a donut but without the fat.
Ingredients
  • 2 cups apple cider
  • 1 medium cooking apple
  • 1/4 cup butter - melted
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 egg
  • 1/2 cup buttermilk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cups salt
  • 2 cups flour
  • Sugar Mixture for dipping
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
Instructions
  1. Add cider to a saucepan. Grate an apple using the smallest holes on the grater into the cider. Reduce cider mixture by 2/3 over medium high heat. Cool.
  2. Preheat oven to 375 degrees.
  3. In a bowl combine the butter, sugar, buttermilk, egg and vanilla with a whisk. Add the cider mixture.
  4. Add the remaining ingredients and stir until well combined.
  5. Spray a mini muffin pan with cooking spray. Spoon the mixture into the pans.
  6. Bake for 12 - 15 minutes until lightly browned. Combine sugar and cinnamon in a small bowl. Remove from pan and dip in cinnamon sugar mixture while still hot.
