Pineapple Zucchini Muffins

Muffins full of zucchini and pineapple.
Ingredients
  • 3 cups grated fresh zucchini
  • 1 cup crushed pineapple - drained
  • 1/3 cup melted butter
  • 1/3 cup oil
  • 1 1/3 cup sugar - I used 2/3 cup Truvia
  • 2 eggs, beaten
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • Pinch salt
  • 3 cups all-purpose flour
  • 1 teaspoons cinnamon
  • 1 cup raisins or dried cranberries (optional)
Instructions
  1. Preheat oven to 375 degrees.
  2. Add sugar, butter, oil and vanilla to a bowl. Mix until combined with a spoon. Stir in zucchini and pineapple. Stir in.
  3. Add flour, soda, spices and salt. Stir until just blended. Add raisins or cranberries if using. Scoop batter into muffin pan.
  4. Bake for about 20 minutes or until a tester comes out clean.
