Quick Barley with Mushrooms

- 12 oz. sliced mushrooms
- 1 tablespoon oil
- 1 cup diced onion
- 1 cup sliced carrots
- 1/2 cup peas
- 1 1/2 cups quick cooking barley
- 3 cups beef broth
- salt and pepper
- 2 tablespoons chopped fresh parsley - optional
- Saute the mushrooms in the oil until browned. Stir in the onions and cook until transparent.
- Add the carrots, beef broth, salt and pepper. Bring to a boil.
- Stir in the barley. When it begins to simmer, cover the pot and cook for 10 - 12 minutes. Taste to see if barley is cooked.
- Add peas and parsley. Turn off heat and let set for a few minutes. Fluff barley with a fork.
