Crock Pot Cuban Pork Loin

Smithfield Pork Loin Filet cooked Cuban style in the crockpot.
Ingredients
  • 1 package Smithfield Pork Loin Filet
  • Marinade
  • 1 10 oz. bottle Mojo Marinade
  • 2 navel oranges
  • 1 lemon
  • 1 lime
  • 5 cloves garlic
  • 2 teaspoons oregano
  • 1 teaspoon pepper
  • 1 1/2 teaspoons salt
  • Vegetables
  • 4 sweet potatoes
  • 1 red pepper
  • 1 green pepper
  • 1 sweet onion
  • 1/2 cup olives
  • 1/2 cup raisins
  • 1 16 oz. can chopped tomatoes
Instructions
  1. Mix together the marinade ingredients. Quarter the oranges, lemon and lime after squeezing the juice into the marinade. Add the garlic, salt, pepper and oregano. Put the roast in a plastic bag and pour the marinade over it. Refrigerate overnight.
  2. Brown the roast in the morning before putting it in the crockpot with a little salt and pepper.
  3. Chop the vegetables and add to the crockpot. Add everything else. Pour the marinade over all.
  4. Cook on LOW for 8 hours or over HIGH for 4 hours. Pork should be 165 degrees when done.
