Ground chicken and pork rolled into meatballs and then baked. I made a homemade buffalo sauce and cooked them a little more. Serve with blue cheese dressing.
Ingredients
Meatballs
1 lb. ground chicken
1 1/4 lbs. ground pork
2 eggs
1 cup panko
1/2 cup milk
1/2 teaspoon garlic salt
1/2 teaspoon pepper
Buffalo Sauce
1/2 cup butter
1 cup hot sauce
1/2 cup water
Blue Cheese Dressing
1 1/2 cups sour cream
1 cup real mayonnaise
1/4 cup milk
3/4 cup blue cheese crumbles
1/2 teaspoon garlic salt
pepper to taste
Instructions
Put all of the meatball ingredients in a bowl. Mix everything together well. Shape into walnut size meatballs or use a medium scoop, Place on greased baking sheet. Bake for 20 minutes at 350 degrees.
Add the sauce ingredients to a large pan. Bring to a boil. Add the meatballs and simmer for another 20 minutes. You want the water to evaporate so that the sauce gets thick.
Mix together the dressing ingredients in a small bowl. Serve with the meatballs on the side. You can also put a few blue cheese crumbles over the meatballs before serving.
