Lemon Pudding Magic Cake

Creamy lemon pudding layer with the right amount of tart and sweet topped with a delicate cake crust.
Ingredients
  • 1 1/2 cups sugar
  • 2 tablespoons butter, melted
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • peel from one lemon
  • juice of 2 lemons
  • 3 eggs, separated
  • 1 1/4 cups milk
Instructions
  1. Preheat oven to 375.
  2. In a medium bowl, stir together sugar, flour, salt, lemon peel and lemon juice.
  3. In a small bowl, beat egg yolks with milk until well blended, stir into lemon mixture. Add the butter and mix well.
  4. In another medium sized bowl, beat egg whites with an electric mixer until they hold distinct but moist peaks. Gently fold egg whites into lemon mixture.
  5. Pour batter into a 8 x 8 pan that has been sprayed with cooking spray.
  6. Bake on the lowest rack of the oven until the top is browned and the center jiggles only slightly when pan is gently shaken (30-35 minutes). Let cool before serving.
