Red Beans with Ham and Rice

  • 1 lb. red beans
  • 2 cups chicken broth
  • water to cover
  • salt and pepper to taste
  • 1 1/2 cups chopped onions
  • 1 ham steak - chopped
  1. Pick thru the beans and remove any broken ones. Soak the beans overnight in water.
  2. Rinse the beans and add the chicken broth. Cover the beans with water. Put over medium heat and bring to a boil. Add the onions and reduce heat to a simmer. It will take about an hour or hour and half to cook. Add the salt and pepper to taste.
  3. In the last 10 minutes of cooking add the chopped ham pieces.
  4. Serve over rice.
