Thin crispy flat bread with fresh rosemary and olives in the dough. Perfect with cheese or an olive oil dipping sauce.
Ingredients
  • 2 2/3 cups flour
  • 1 teaspoon yeast
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1/2 cup sliced green olives
  • 1 egg with a tablespoon water, optional
  • cornmeal, optional
Instructions
  1. Mix together the flour, yeast and salt in a mixer bowl fitted with a dough hook.
  2. Add the eggs to a small bowl and add the water. Mix together until the eggs are blended together. Add to the mixer bowl with the olive oil. Knead with the dough hook until the dough starts to come together. Add the olives and rosemary. Continue to knead until it is smooth and satiny. (If needed add a little additional water)
  3. Cover dough in bowl and let raise until doubled, about an hour.
  4. Preheat the oven to 400 degrees. Grease a cookie sheet and sprinkle with a little cornmeal.
  5. Divide the dough in 2 pieces. Roll out dough into a rectangle about 6 x 8. Cut 3 slits with scissors or a knife on the long side on both sides. You will have 6 slits. Spread them open a little. Repeat with remaining dough. Cover and let raise just until it doubles, about 20 - 30 minutes.
  6. Brush with the egg wash. Bake for 20 minutes or until lightly browned on top and the bottom. Cool or serve warm.
