Grating Soft Cheeses
Any soft cheese will grate easier if you freeze it first. Wrap the cheese in plastic wrap tightly. Freeze for at least 20 minutes and then grate the cheese. You can then store the cheese if you need to in a plastic bag for 2 to 3 days.
