Weight Watcher Orange Fluff

This is a quick and easy snack or dessert for you to make and it is only 1 point per serving. Adding 1 cup of pineapple like I did here is another point.

Orange Fluff

1 package Orange Sugar Free Jello
1 package Jell-O Sugar Free Pudding Vanilla
2 cup(s) Cool Whip Free Whipped Topping
1 cup(s) canned unsweetened mandarin oranges

Prepare Jello according to package. Set aside for 5 minutes.

Stir in Vanilla Pudding mix and blend together.

Fold in Cool Whip and then oranges.

Chill at least 30 minutes before serving.

Makes 6 servings at 1 WW point each

Turkey Meatball Soup

I made a quick and easy turkey meatball soup for dinner tonight and it is only 4 points a serving. I actually did a short cut and used a 12 oz. bag of frozen Mirepox vegetables that you can get at Kroger in place of the carrots, celery and onion.

My husband even had a bowl. He is not finding this Weight Watchers as bad as he thought it might be. There is a carrot cake recipe I am going to try one day this week and see if that convinces him.

I met with a trainer today at the Fitness Center and we are good to go. My first session is next Tuesday in the pool. Can’t wait to get going!

Turkey Meatball Soup

5 cup(s) fat-free chicken broth
2 cup(s) frozen peas and carrots
1 1/2 cup(s) celery
1 1/2 cup(s) frozen chopped onions
10 oz Turkey, ground, 93% lean/7% fat, raw
1/4 cup(s) uncooked oatmeal
1/4 cup(s) Egg substitute
salt and pepper

Add broth and vegetables (except peas) to pan. Bring to a boil and cook for 20 minutes over medium heat.

Add ground turkey, egg substitute, oatmeal and seasoning (salt, pepper and any spices you like) to a bowl. Mix well.

Drop meatballs into broth and cook another 15 minutes. Add peas during last 5 minutes of cooking.

The Journey Continues

What journey you say? Week 2 of Weight Watcher’s started today and I have to admit last week was easier than I thought it would be and I lost more than 5 lbs. I am surprised at the quality of the pre-packed Weight Watcher foods you can buy. I remember the last time I bought a low fat cream cheese it went straight into the garbage. The Weight Watcher cream cheese is actually edible! Today I bought some Mini Dark Chocolate Raspberry Bars and I would buy these again even if I wasn’t trying to lose weight and they are only 1 point.

So tonight for dinner we had grilled pork loin center cut chops, roasted butternut squash, cranberry apple salad and some grilled zucchini. Dinner tonight was 9 points.

I loved the Cranberry Apple Salad and luckily I had some frozen cranberries. Sugar free jello can really be your friend. LOL This salad would be really good with chicken also. I can see this as a staple in my fridge. A cup of this salad is 1 point.

Apple Cranberry Salad

1 cup(s) cranberries
1 cup(s) water
6 packet(s) Sweet ‘N Low Granulated Sugar Substitute
1 serving(s) cranberry sugar free jello
3/4 cup(s) celery
1 medium apple(s)
1/4 tsp table salt
14 pecan halves

Cook cranberries in water until they pop. Add sweetener and cook 3 minutes. Remove from heat and add Jell-O to hot cranberries.

Add celery, apple, nuts and salt.

Pour into serving bowl and refrigerate until set.

Serves 4 at 1 point each

The grilled zucchini is easy to do, cut it into spears, spray lightly with Pam. Season with salt, pepper and any spices you like. I tend to use a spice by Penzeys called Mural of Flavor, a salt free seasoning they make. We love it and I use it often.

I roasted the squash for about 30 minutes at 400 degrees in a convection oven. I sprayed again lightly with Pam and added salt and pepper. One cup of this is one point also.
