Roasted Cranberry Crostini - delicious roasted cranberries, herb cream cheese on a crostini.
Ingredients
12 oz. fresh cranberries
2 tablespoons balsamic vinegar
1/2 cup sugar
French bread
garlic and chives cream cheese
Instructions
Line a cookie sheet with parchment paper.
Preheat oven to 400 degrees.
Spread cranberries out on the parchment.
Sprinkle the sugar over the cranberries.
Sprinkle the balsamic vinegar over the cranberries. Stir.
Bake for 10 minutes. Take out of oven and stir to blend everything together.
Put back in oven and bake for another 5 - 10 minutes. You want the juices to thicken up slightly.
Cool.
Slice the French bread into 1/4 inch slices. Place in a single layer on a cookie sheet. Bake for 5 minutes. Turn the bread over. Bake another 5 minutes. Remove from oven when they just start to turn a golden brown. Cool.
To make crostini, spread a layer of the cream cheese on the bread. Top with some of the cranberry mixture. Serve.
