A New York Strip Roast with Gremolata Butter
Ingredients
  • 1 New York Strip Roast - mine was 3.5 lbs.
  • 1 tablespoon salt
  • 2 teaspoons freshly ground pepper
  • 1 tablespoon oil
  • Gremolata Butter
  • 1/4 cup flat parsley
  • 3 garlic cloves
  • 1/2 cup butter
  • 2 tablespoons lemon juice
  • rind from 1 lemon
Instructions
  1. Rub the oil over the roast. Salt and pepper the roast. Rub it into the roast so that it sticks to the meat.
  2. Preheat the oven to 450 degrees. Place the meat, fat side up in a roasting pan fitted with a rack. Bake for 15 minutes.
  3. Turn down heat to 325 degrees. Roast for about 1.25 hours or until roast reaches 135 - 140 degrees for medium doneness.
  4. Remove roast from oven. Tent loosely with foil and let set for 10 minutes before carving.
  5. To make the gremolata butter, add the parsley leaves and garlic to a food processor. Process until finely chopped. Add butter. Roll into a cylinder on waxed paper. Refrigerate until ready to use.
