Ingredients
  • Crepes
  • 2 cups flour
  • 1 1/2 cups milk
  • 1 cup water
  • 4 eggs
  • 1/4 teaspoon salt
  • 4 tablespoons sugar
  • 6 tablespoons melted butter
  • Cheesecake Filling
  • 2 8 oz. packages cream cheese at room temperature
  • 2/3 cup sugar
  • 2 teaspoons vanilla
  • zest from 1 lemon
  • 1/3 cup heavy cream
  • Blueberry Topping
  • 4 cups blueberries
  • 3/4 cup sugar
  • 1 lemon juiced
  • 1/2 cup water - divided use
  • 1 1/2 tablespoons cornstarch
Instructions
  1. Crepes:
  2. Add the eggs, water and milk to a mixing bowl or blender. Beat until blended together. Add the sugar, salt, and flour. Whisk until combined. Stir in the melted butter. Cover and set aside for a hour in the refrigerator or overnight.
  3. Lightly oil an 8 inch frying pan. Use a 1/4 cup measuring cup and fill it with the batter almost to the top. Pour the batter into the center of the pan. Swirl the pan and get the batter to cover the bottom of the pan. Cook for about 1 minute and then flip the crepe over and cook another 45 seconds. Put them on a plate and stack them one on top of another until you have used all of the batter. Cover them with a towel until they have cooled. Refrigerate until ready to use.
  4. Filling
  5. Put the 2 packages of cream cheese into a bowl. Add the remaining ingredients and with an electric mixer beat until light and fluffy. Refrigerate until ready to use.
  6. Blueberry Topping
  7. Add the blueberries, sugar, 1/4 cup water and lemon juice to a saucepan. Bring to a boil over medium heat. Cook for about 5 minutes. Add the remaining water and cornstarch to a small bowl and mix it well. Stir it into the hot blueberries stirring until it thickens. Remove from heat to cool.
  8. To assemble
  9. Place a crepe on the bottom of the dish you plan to serve this on. Add a scoop of the cheesecake filling. If you don't have a scoop it is about 2 tablespoons of the filling. Top with another crepe and repeat until the cake is at the height for your cake plate. (I had about 10 crepes left over to use for something else.)
  10. Warm the blueberries and top with them at serving time.
  11. Serves 6
