Crock Pot Vegetable Beef Soup

- 1 lb. stew beef
- 1 tablespoon oil
- 3 carrots
- 3 stalks celery
- 3 potatoes
- 1 can petite diced tomatoes
- 1 cup water
- salt and pepper to taste.
- 2 cups beef broth
- Cut the stew beef into bite size pieces. Heat the oil in a frying pan. Add beef and quickly brown it. Add it to the crock pot.
- Chop all of the vegetables into bite size pieces. Add to the crock pot.
- Add the water and beef broth. Add the salt and pepper.
- Turn the crock pot onto high and cook for at least 6 hours.
