Fold in Beaten Egg Whites

If the recipe you are using calls for folding in egg whites, it is easy to do.

First after your whites are beaten, fold in 1/3 of the whites. You do this with a spatula and cut down thru the batter and make a sweeping motion up. Do not stir them in, this will break down the whites. Continue adding the whites a 3rd at a time rotating the bowl as you go.
